Shredded Pork Tenderloins

- 2 Pork Tenderloins
- 1 - 3 Chipotle Chilies in adobe sauce chopped
- 1 cup Orange Juice
- 6 cups Chicken Broth
- 1/2 Yellow Onion chopped
- 3 Carrots peeled and chopped
- Steak Seasoning to coat
- 2 tbsp Olive Oil extra virgin
Season pork tenderloins with steak seasoning.
Heat olive oil in skillet, and brown the tenderloins on all sides.
While that is browning, mix together 2-3 chipotle chilies and orange juice using a blender or an immersion blender.
Set InstaPot on Sauté, and add the chilies and orange juice mixture.
Once the meat is browned, add to the InstaPot.
Sauté the onion and carrots in the skillet, and add some of the chicken broth - cook for a few minutes.
Pour the remaining chicken broth into the InstaPot, and add the onion and carrot mixture.
Close lid and pressure valve and set the InstaPot to Pressure Cook for 45 minutes.
Once done, the meat is tender and easy to shred for tacos or enchiladas. (It takes the InstaPot about 15 minutes to cool down)
If using a slow cooker, follow the same instructions, except cook for 6-8 hours on low heat.
Two Pork Tenderloins are usually packaged together.
