Elevated Quesadillas

Want a quick and delicious restaurant quality quesadilla, without the restaurant price? This one simple ingredient, sautéed, adds magic to these quesadillas.

Ingredients
  

  • 1 tbsp Olive Oil extra virgin
  • 1 tbsp Unsalted Butter
  • 1/4 Red Onion sliced thin
  • 12 flour tortillas
  • 1 cup Cheddar Cheese shredded
  • 1 Chicken Breast or 1 steak chopped or sliced
  • Sour Cream optional
  • Jalapeños sliced - optional
  • Salsa optional

Method
 

  1. Heat oven to 350 degrees.
  2. Heat skillet and add olive oil and butter. Once butter has melted, add the onion and cook until tender.
  3. Using a cookie sheet, lay out six flour tortillas and top with cheese and steak. Add sautéed onion and top with more cheese. Place a flour tortilla on top of each quesadilla.
  4. Place in oven for 2-3 minutes, making sure to pull them out once the cheese starts to melt.
  5. Cut quesadilla into 6 wedges, and serve with salsa, sour cream and jalapeños, if desired.

Notes

Steak can be a New York strip or whatever your preference. Most times, I also add Swiss cheese with the cheddar. If I am only making two, I use my toaster oven, and place the quesadilla in, and set it to toast-medium.
