Cauliflower mash is my new favorite go to when I want a low carb and kept friendly substitute for mashed potatoes. And, you know it has to be good when people ask for the recipe!

Recently, my sister, Julie, visited me and showed me how she makes her Cauliflower Mash. Actually, she had me make it so I would remember how. It was so delicious.
Filling, Yet not Heavy!
Such a simple dish to make with only 3 ingredients! Can you believe that? Cauliflower, cream cheese, and shredded cheddar. This is actually where you can get really creative – think loaded baked potato! The additions are limitless! Bacon, chives, cheese – my mouth is watering right now!
Let’s Get Started
First I get my steamer pot ready to go by putting water in the bottom, adding in the steamer basket, and setting it on the stove on high. I place the lid on to help the water boil faster. This way, it will be ready for the cauliflower when I am done cutting it up.
Next, take a whole head of cauliflower and rinse it off really well. Cut off any bad spots and discard them. Then, cut out the stem in the bottom. Once that is done, you can start chopping up the cauliflower. Don’t worry about being pretty, it just needs to be chopped for steaming.

Take the chopped cauliflower and carefully place it into the hot steamer pan. Return the lid to the pan and let it steam for about 10-15 minutes. Check it every so often, as you want to be able to use a fork to see if it is tender.
While the cauliflower is steaming, take the softened cream cheese and place it in the bottom of a food processor. (You can soften the cream cheese in the microwave for 10-15 seconds if you need to.) Also, get the shredded cheese ready as well.
Start Mixing it All Together
When the cauliflower is nice and tender, place it into the food processor on top of the cream cheese and start blending the mixture. Add some salt and pepper for seasoning. Toss the shredded cheese on top and pulse the mixture a couple of times. (Or run the food processor for about 10 seconds.)
Serve it up nice and hot with a big juicy steak!

Cauliflower Mash
Ingredients
- 1 head Cauliflower chopped into large pieces
- 4 oz Cream Cheese softened
- 1/2 cup Cheddar Cheese shredded
Instructions
- Fill a steamer pot with water and start heating on the stove.
- Remove core of the cauliflower and rough chop the cauliflower.
- Place chopped cauliflower into steamer pot and steam until tender.
- Add softened cream cheese to food processor.
- When cauliflower is tender, add to food processor.
- Blend well. Add cheddar cheese and blend again.
- Season with salt and pepper to taste.
