Crustless pizza is my new favorite thing for lunch. Recently, I have been trying to lower my carb intake. I was really shocked to see how many carbs I was consuming on a daily basis. I’d tell you, but let’s just not go there.
When I was growing up, I wasn’t a big bread eater, but as time went on, sandwiches, rolls, and donuts, became part of my daily eats. However, my sister came for a visit and is all about the Keto or low-carb eating.
This is in large part due to the fact that her family suffers from Gluten Intolerance. It is a real struggle and she has found many ways to cook and bake Gluten free and low-carb.
Let’s Get Back on Topic
I digress, I started out with Pizza and ended up with low-carb. So to get back on topic, I love pizza, always, always, always!! It is my most favorite thing to eat. What I don’t like about pizza is the crust. So much so, that I actually prefer thin crust.
Basically, I just wanted something to hold all my veggies, meats, sauces and cheese. With this new thought process of eliminating breads, among other things, I decided to make this crustless pizza.
You Can Have Your Pizza and Low-Carb!
Talk about easy and delicious! It merely takes a few minutes to prepare in my handy toaster oven. Take a glass pie pan and spray it with Olive Oil Pam. Then, load it up like you would if it was the crust!
Start out with sauce, meats, veggies, and top it off with cheese. Place it in your toaster oven at 350 for 5-10 minutes. Keep an eye on it, so it doesn’t burn. Basically, the cheese just needs to melt and get gooey! When the cheese is melted nicely, remove it from the oven.
Lunch or Dinner is Served
I used a pizza cutter to cut mine into four sections. It kind of reminded me of lasagna. It’s so easy and delicious! The toppings and flavor combinations are unlimited. So go have fun and create your own version of a crustless pizza. Let me know how it turns out.

Crustless Pizza
Ingredients
- 1/4 cup Marinara or Pizza Sauce use more or less if needed
- 10 Pepperoni Slices
- 1 cup Raw Veggies chopped or sliced
- 1 cup Mozzarella Cheese or Italian Cheese Blend Shredded
Instructions
- Heat oven to 350 degrees.
- Spray glass or metal pie pan with Olive Oil Pam to prevent sticking.
- Spoon marinara sauce into pan and spread around, as you would with pizza crust.
- Top with pepperoni and raw veggies.
- Cover well with shredded mozzarella cheese.
- Bake for 5-10 minutes at 350 until cheese is melted and gooey.
- Cut with Pizza cutter and enjoy.
