A sunny side up egg on black-eyed peas is a new invention of mine this year.  If you are like me and from the Midwest, you get it. If not, you need to give it a go!

This new years’ day tradition is said to bring good luck for the coming year.  Personally, I believe that it is a great way to make use of the leftover ham and bone from the holiday feasts.  It’s the king of comfort foods, is inexpensive, feeds a good sized group and easy to make.

Get an InstaPot!

That said, I decided to make mine in the InstaPot that I got for Christmas last year.  As is typical, I researched Pinterest to find a recipe and found the perfect one.  The pin linked to the blog, “apinchofhealthy.com“.  Marjorie’s recipe was easy to follow, had simple ingredients, clear instructions, and the end result was absolutely delicious.

What to do with the Leftovers?

Since there are only two of us in the house these days, there was quite a bit left over. This got me to thinking about how I could use some of the leftovers creatively. I have always loved eggs for breakfast. Always, always, always, I digress.  Anyway, I thought maybe putting an over easy egg on top would make it a great breakfast.

Heat up the black eyed peas, fry the egg, toast a muffin and pour some juice.  That’s it, so easy!

Travel Inspires our Menu

This idea is partially from when we went to Ireland several years ago. Before going to Ireland, the idea of having any kind of beans for breakfast was flat out weird! However, I do have a saying, “When in Rome – do as the Romans”.  I haven’t been to Rome, but the gist of the saying is to try the locals cuisine no matter where you are traveling.  It’s a great way to try new foods, the locals love you for it, and the infusion into your menu back home is incredible.  In Ireland, their typical breakfast includes bacon, eggs, broiled or roasted tomato halves (also delicious!), toast, sausage or “bangers”, and baked beans.

The baked beans were more like pork and beans, where I was; nonetheless, the combination of the beans with the egg was amazingly delightful!  From that point on, whenever I get a yearning for the taste of Ireland, I will pop open a can of pork and beans and fry or poach a few eggs.  The silky egg yolk mixing with the sauce of the beans, with toast to sop it all up, so yummy!

Moving on, I must admit my sunny side up egg technique needs improvement.  Somehow, the bottom is overcooked and the top is undercooked. Does anyone have any tips to correct that? If so, I’d love to hear them! If you struggle with this as much as I do, an over-easy fried egg or poached egg is the way to go.
