I love black beans, actually all beans, they are so comforting, tasty, healthy, and just plain good. But, I have to say, eating black beans, as a side dish used to be so boring and flavorless, until I discovered this one simple trick.

So Darn Simple

Adding fresh onion and cilantro takes these beans to a whole new level of goodness. First, I heat up a 6 quart sauté pan, add olive oil and sauté the chopped onions. Sometimes I add some jalapeño peppers, hatch chilies or bell peppers. Once these are soft, I add the chopped cilantro and let that cook down a bit. I want the flavor of the cilantro to come out so it will deepen the flavor of the beans. Add the beans and let this simmer for a bit. The longer they simmer, the richer the flavor.

Ingredients

  • 2 cans Black Beans undrained (15 ounce cans)
  • 2 Garlic Cloves, minced
  • 1/2 Shallot chopped
  • 1/2 Yellow Onion chopped
  • 1/2 bunch Cilantro chopped
  • 1 tbsp Olive Oil extra virgin
  • 1-2 whole Jalapeno Peppers chopped – optional

Instructions

  • Heat oil in a skillet and add diced onions, shallot, salt, pepper, and jalapeños if adding.
  • Sauté until onions are translucent.
  • Add cilantro and garlic. Stir into onions and let simmer a few minutes.
  • Add beans to mixture. Simmer about 30-45 minutes. Serve hot.

Notes

Do not drain the beans.
