Quesadillas anyone? I love quesadillas, and I love to eat out at restaurants, for several reasons. I mean, really, who doesn’t – no dishes to wash, no work, etc., need I say more? However, my body doesn’t handle the extra calories as well as my mind does. Therefore, I have tried to find a way to make some of my restaurant favorites at home.

Restaurant Quality, without the Restaurant Price
This is how my Elevated Quesadilla came to be. You can use any meat you want; I typically use leftover steak, or even deli chicken works well. What makes this quesadilla elevated is one simple ingredient, sautéed.

One Simple Trick – Seriously
First, I take a red onion and slice it, thin. Then, I sauté it in a preheated skillet in unsalted butter and olive oil. I let this sauté until the red onion is tender and translucent. Sometimes it looks a little brown, but don’t be deceived, this just adds to the flavor. While the onion is sautéing, I layer a flour tortilla with cheese and meat. When the onion is nice and tender, I place it on top of the meat and cover with more cheese and the top flour tortilla.

Get a Toaster Oven – You Will Love It!
I tend to make my quesadillas in my toaster oven, but you can also make them in a skillet. Or, if you are asking several, you can use a cookie sheet (aka Jelly Roll Pan) and bake them in the oven. I like mine to be gooey and crunchy at the same time. Serve this with sliced pickled jalapeños, salsa, and sour cream. Absolutely delicious!

Enjoy,
Sherri
