Nachos are a favorite of mine. This is because when I was growing up my mom and I made plain cheese nachos all the time. It was one of our favorite things to eat while binge watching VHS movies we had rented from Blockbuster. The VHS tapes are no longer around, and sadly my mom has been gone way too long. But making a simple batch of cheese nachos always makes me remember those fun times we spent together.
A Little Kansas History
I grew up in Kansas, Overland Park and Prairie Village, specifically. We had a restaurant called, Taco Via’, it was our favorite place to go for lunch when I was in high school. Although several of the restaurants have closed, there are still a few open to support their “cult” following. I say that fondly, because, every single time I go to Kansas City, my stay must include lunch at Taco Via’!
Nacho Usual Nacho
My go to is their “Nacho”; a single crispy fried corn tortilla topped with shredded cheese and a swirl of their signature sauce, melted in the oven. Yum! But I also had another favorite, their “Sancho”; a simple flour tortilla filled with meat, cheese, lettuce, tomato and their sauce. I know it’s technically “fast food”, but the flavor takes me back to my high school days, and my youth. It’s like going into a gastronomic time capsule. My mouth is watering right now and Kansas City is so far away.
Quick and Simple
Anyway, to get back on topic, I made the flat Nacho for my testers, the granddaughters, and they loved it! Even my grandson, who wasn’t even two, wanted more. I simply pick up a pack of crispy corn tortillas, swirl on a little sauce and top with cheese, and bam, the kiddos are happy. This probably isn’t the most nutritious snack, but you can always supplement with roasted veggies, and rice.
Rolled up Taco
They are also happy eating the “Sancho” – or rolled up taco as we call it. Additionally, I will make nachos adding the ingredients listed above in the Sancho. So many times, nachos do not include lettuce – I mean, what is up with that. And, they have liquid cheese; is that even real cheese?
Taco Nachos
Brown the ground beef with Mexican spices; I use my husband’s steak seasoning mix and add a little cumin and drain the beef. Sometimes I top it with deli chicken or leftover steak. Start by piling the Nachos on a plate. Add cheese, shredded or even sliced cheese works. Melt the cheese in the toaster oven, regular oven or even the microwave. I cover that with lettuce, tomatoes, salsa and sour cream. Sometimes I use my Ultimate Chipotle Salsa to change-up the flavors. This is a quick and easy snack, lunch or dinner.

Nacho Nachos
Ingredients
- 4-8 Corn Tortillas Crispy flat
- 1-2 cups Cheddar Cheese Shredded
- Salsa as needed
- Jalapeño slices as needed, optional
Instructions
- 1) Swirl salsa on corn tortilla
- 2) Add shredded cheddar cheese
- 3) Add Jalapeño slices, if desired
- 4) Place on cookie sheet and heat in 350 degree oven for 3-4 minutes, or until cheese is just melted.
