Recently, on a trip to the grocery store, I picked up this large package of pork tenderloins. I inadvertently got the wrong kind, which actually turned out to be a good thing. My husband didn’t know what to do with it, as he thought it was one big pork tenderloin. So, I decided this meat was going into the InstaPot, and that I’d figure out what to do with it after it cooked.
And then there were Two
Imagine my surprise when I opened the package and found two separate tenderloins, very similar to the ones we normally cook. However, I decided to keep moving forward with my plan to cook them in the InstaPot. Do you ever have those days when you think in the back of your mind, “we can always order pizza”. Well, this was certainly one of those days!
Onward Ho
First I seasoned the meat with my husband’s steak seasoning mixture. Heating my skillet up firs, I browned the meat on all sides. Once the meat was browned, I placed it in the InstaPot. I threw some chopped onions and carrots into the skillet and deglazed the pan with chicken broth. This mixture was then poured over the tenderloins, I did throw in a piece of cilantro, but it was so small, it may not have added anything to the final flavor.
Set it and Relax
Most importantly, I set the InstaPot for 45 minutes, figuring it would take about 15 minutes for the pressure to release naturally. I spent the next hour relaxing in our back yard, enjoying the sounds of the birds singing.
Another Good Thing
The other really nice thing about the InstaPot is that after it is done cooking, it automatically switches over to warm. So, if you have to run an errand or lose track of time, no worries. Your food is safely warming, awaiting your return.
Meal is Finished
Once the meat was done cooking, I pulled it out and saw how tender it was, so I decided to shred it. This gave me an even better idea of how to use the meat; tacos, enchiladas, tamales, the choices are endless.
Great Way to Save Money
Additionally, I realized I can make this with just one pork tenderloin when it is just the two of us eating – and that will give us some leftovers to eat another day. The tenderloins we usually buy come in a pack of two, so I can freeze one for my hubby to grill and one for me to cook in the InstaPot.

Shredded Pork Tenderloins
Ingredients
- 2 Pork Tenderloins
- 1 – 3 Chipotle Chilies in adobe sauce chopped
- 1 cup Orange Juice
- 6 cups Chicken Broth
- 1/2 Yellow Onion chopped
- 3 Carrots peeled and chopped
- Steak Seasoning to coat
- 2 tbsp Olive Oil extra virgin
Instructions
- Season pork tenderloins with steak seasoning.
- Heat olive oil in skillet, and brown the tenderloins on all sides.
- While that is browning, mix together 2-3 chipotle chilies and orange juice using a blender or an immersion blender.
- Set InstaPot on Sauté, and add the chilies and orange juice mixture.
- Once the meat is browned, add to the InstaPot.
- Sauté the onion and carrots in the skillet, and add some of the chicken broth – cook for a few minutes.
- Pour the remaining chicken broth into the InstaPot, and add the onion and carrot mixture.
- Close lid and pressure valve and set the InstaPot to Pressure Cook for 45 minutes.
- Once done, the meat is tender and easy to shred for tacos or enchiladas. (It takes the InstaPot about 15 minutes to cool down)
