Gorgonzola Steak Pasta is amazingly easy to make and is rich and creamy.
What is Gorgonzola?
Gorgonzola is one of my favorite cheeses! It is similar to Blue Cheese, but is a little salty and has a slight bite to it. What I love is the way the cheese is creamy and tangy and also so yummy! I often just eat the crumbled cheese right out of the container, which is tough to avoid when I am trying to make this creamy dish.
Work as a Team
My husband and I typically work together in the kitchen as a team. For this specific dish, I am the sous chef and he is the sauce cook. I get the ingredients together, measure the pasta, and get the water going. He works on making the sauce, which needs some special attention, since there is milk and flour involved. It’s nice because we use fresh pasta and it takes about the same amount of time to cook as the sauce.
Make the Sauce Just Right for You
You can thin or thicken the sauce depending on how much milk you use. If your sauce is too thin, add some more Gorgonzola cheese; too thick, add more milk.
I have to say, once you make this dish, it will be your go to pasta dish. We make it using our leftover steak from our Friday Steak Nights.

Gorgonzola Steak Pasta
Ingredients
- 1 or 2 Filets or other steak cooked how you prefer
Sauce Mixture
- 1 Tbsp All Purpose Flour
- 1 Tbsp Olive Oil extra virgin
- 2 Garlic Cloves minced
- 1 1/4 cup Milk
- 1/2 cup Gorgonzola Cheese crumbled
- 2.2 oz Cream Cheese room temperature
- 8 oz Fettuccini Noodles cooked
Instructions
- Cook pasta (If using fresh pasta, cook while sauce is cooking)
- Heat a saucepan over medium heat. Add oil to pan; swirl to coat. Add garlic; Cook one minute.
- Stir in flour. Gradually add milk, stirring with a whisk. Cook six minutes or until mixture thickens, stirring constantly.
- Add Gorgonzola and cream cheese. Stir with the whisk until cheese melts. Add salt and pepper to taste.
- Toss the sauce with the pasta and sprinkle with Parmesan Or Gorgonzola cheese.
