Ultimate Chipotle Salsa

I crave salsa, every day, all the time, and I want it on everything.  Well, maybe not everything.  But, it is one of my daily addictions.  What’s not to love about it.  It is mainly veggies, and thus is lower in calories. And, it compliments a large variety of foods, like chips, tacos, fish, quesadillas, etc.   I am sure there are many more foods this salsa would make as a yummy topping or dipping sauce.  This recipe is so easy, and only takes five ingredients! You can get the Chipotle Chilies at the end of this post.

Mix Up the Goods

First prepare your ingredients.  Chop up your red onion, and cilantro.  Add a can of diced stewed tomatoes or two, depending on the heat you prefer, and stir this mixture together.  Slowly add chopped chipotles.  Key word, Slowly.  Some chipotles appear to be hotter than others, and you can always add more heat. Conversely, you can add more tomatoes if you need to cool it down.

Ultimate Chipotle Salsa

Once you have settled on the appropriate heat, squeeze half a lime over the mixture and stir.  Set the salsa aside for about 15 minutes for the flavors to fully combine. When you are ready, add a side of chips and serve it to your guests!

Ingredients

  • 1 can Diced Tomatoes 16 ounce can
  • 2 tbsp Cilantro Chopped
  • 1/2 Lime juiced
  • 4 Chipotle Chiles in Adobe sauce (canned) chopped (1 small can)
  • 1/2 Red Onion diced

Instructions

  • Mix together red onion, cilantro. and diced stewed tomatoes.
  • Add chopped chipotles.  Start with a little and add more if you want more heat. 
  • Once you have settled on the appropriate heat, squeeze half a lime over the mixture and stir.
  • Set the salsa aside for about 15 minutes for the flavors to fully combine.

Notes

If the salsa is too hot, add another can of diced tomatoes.
