Chicken and Mango Salad

This is a fresh Spring & Summer Salad made with Chicken and Mango

Ingredients
  

  • 1 Head Romaine Lettuce, Chopped
  • 2 Chicken Breasts, Grilled Can serve warm or cold
  • 1 Mango, Peeled, and Chopped
  • 1 Cup Cherry Tomatoes, Quartered
  • 1/2 Red Onion, Sliced Thin
  • 1/2 Cucumber, Quartered, and Sliced
  • 1 tbsp Pepitas, (Roasted Pumpkin Seeds)
  • 1 tbsp Sunflower Kernels, Roasted
  • 2 tbsp Goat Cheese, Crumbled
  • Balsamic Vinaigrette Dressing To Taste
  • Pepper, Freshly Ground

Method
 

  1. Roughly chop the Romaine Lettuce and place it in a Salad Spinner to Clean and Dry the Lettuce.
  2. Chop the lettuce into bite-sized pieces and place in a large salad bowl.
  3. Chop the Chicken Breast into bite-sized pieces and lay them on top of the lettuce.
  4. Prepare the remaining ingredients as noted above, layering them on top of the Chicken and Lettuce.
  5. Sprinkle the Crumbled Goat Cheese on top and add Freshly Ground Pepper.
  6. Dress the salad with the Balsamic Dressing, to taste.
