Grilled cheese sandwiches are my favorite thing to eat for lunch, especially with a nice bowl of soup. My hubby prefers tomato soup, but we also have them with split pea soup often.
Mainly because I need to work on a good recipe for tomato soup. My split pea soup is so easy and delicious! This recipe uses an English muffin, but regular bread also works wonderfully.
So, Let’s Get to It!
Take an English muffin (one for each sandwich) and slice it in half. Slice cheese, I personally like to use a combination of Colby-Jack and Swiss cheese. Basically I love cheese. Anyway, their flavors blend together nicely and get really gooey!
Say What?
Here is the weird part, so stay with me. Spread mayonnaise on the outside of the English Muffin, the part that will be grilled. Do it, just do it. Trust me, this is how I make mine all the time. What this does is make the bread grill nicely without being greasy. It’s magic. Or something like that. The mayo makes grilled cheese sandwiches delicious!
The Cheese is the Star!
Build the sandwich by layering the cheese – 3 layers. This isn’t a bread sandwich, folks, its a cheese sandwich so make cheese be the star! Heat a skillet to medium-high heat and add the sandwich mayo side down.
Let the Bread Toast Flipping
Patience is your friend here, so let it get nice and happy before you turn it over. It takes a few minutes, and you want to keep a close eye on it. Once it is nicely toasted, very carefully flip the sandwich over. Sometimes it helps to lightly smash the sandwich before turning, but it’s an art to accomplish a perfect flip.
Let the sandwich go a few more minutes to toast the other side. My cheese didn’t melt all the way when I made these. But, the toasting was done. Thus I popped them into the microwave for about 15-30 seconds to finish them.
These are great served with a bowl of tomato or split-pea soup!

Grilled Cheese Sandwich
Ingredients
- 4 whole English Muffins, sliced in half or 8 slices of bread
- 4 slices Swiss Cheese
- 4 slices Colby Jack Cheese
- 4 slices Sharp Cheddar optional
- 2 tbsp Mayonnaise
Instructions
- Slice the English Muffins in half. The cheese sits better if you use a knife to cut it.
- Spread mayonnaise on the outside of the English Muffins. This helps to grill the muffin without being greasy.
- Set the burner to medium-high heat, once it is heated up, carefully place the muffin Mayo side down.
- Top the muffin with 2-3 slices of cheese. Since the muffin is smaller than bread, you may need to use less cheese. But it's best to have 3 layers of cheese.
- Place the other half of the muffin on the cheese with the Mayo side up.
- Let the muffin toast for a bit. The cheese on the bottom should begin to melt.
- Carefully flip the muffin over and toast the other side.
- Once the muffin is toasted and the cheese is melted, it is done!
