Guacamole dip is one of those easy to make dips that go with any type of party you are throwing. Super Bowl Sunday is especially perfect for serving this chunky dip.
Tough Judges to Please
My granddaughters are my official taste testers, and they have had lots of guacamole dip in their young lives. Often, my daughter will tell me that they will say, “This guacamole dip is not as good as Mimi’s.”
That always makes my heart happy! Also, it is even more special that I have a platform to post my recipes to share with others, as well as a place where they can see my recipes.
Where to Begin
So, as with most of my recipes, I tend to start with a recipe and add little bits of extras here and there; more avocado, cilantro, tomatoes, onions? Yes, yes, yes. Don’t worry if you have more or less, just make sure you taste as you go along with the recipe. And, if all else fails, add in a little salsa!
So, the first thing I do is get all of my ingredients ready. Clean the cilantro by rinsing it under water real well. If you want to use a salad spinner to dry it, go for it. Water is the enemy of guacamole!
While my cilantro is drying out, I dice the onion and tomatoes. A while back, years ago, really, I saw someone making guacamole. They said you want to have equal parts of tomatoes and avocado. Since I am a huge fan of tomatoes, I got on board with that idea right away, and I have never looked back!
It is What You Make it
The nice thing about guacamole dip is that you can make it however you like it. Don’t like tomatoes? Don’t add them. But, if you don’t you are really missing out on a great dip!
Let’s Get Back on Track
Take the tomatoes, onion, chopped cilantro, salt, pepper, and garlic powder and mix it all together. Then, add the chopped avocados. Think chunky! You want to smash it together a little bit using a potato masher, but you also want to leave some nice big chunks in it.
Kick it up a notch by adding chopped jalapeños! Adding a little or a lot is up to you. Obviously, when I make it for my granddaughters, I don’t add any. But, adults usually enjoy the added heat and flavor.
Once it is mixed together nicely, squeeze half a lime over the top and lightly stir to combine. Too much lime juice is not a good thing, so go easy on it. Taste the guacamole dip and add more lime, salt, and pepper if needed.
One More Simple Tip
Keep an avocado seed in the guacamole dip to keep it from turning brown. Serve this delicious chunky dip with tortilla chips. You can also serve it with my other Mexican recipes; Mexican Style Black Beans, Nacho Nachos, Oven-Baked Rice, Shredded Pork Tacos, Stuffed Jalapeños, and Elevated Quesadillas.

Guacamole
Ingredients
- 1/2 Red Onion chopped
- 1/2 bunch Cilantro chopped
- 3 Tomatoes, diced medium
- 1-2 Jalapeños, seeded and diced optional
- 1/2 tsp Garlic Powder
- 3 Avocados, Large and Ripe cut in medium sized chunks
- 1 Avocado Seed, whole The Seed Keeps the Guacamole Fresh
- 1 Lime fresh squeezed juice
- Salt to taste
- Pepper to taste
Instructions
- Mix together everything except the Avocados, Lime, Salt, and Pepper.
- Peel, de-seed, and chop up the avocados into medium sized chunks and add to the mixture. Stir together well. The avocado will naturally begin to get creamy while stirring. Stir it less if you want it to be chunkier.
- Note, as you add the lime juice, add a little at a time - too much lime juice is not a good thing. Add Lime, salt and pepper. And stir again.
- Add Seed to mixture - this will help prevent the guacamole from turning brown.
