These brownies are very easy to make, and usually I find that the ingredients are things I already have in my pantry. Always knowing I can make these in a snap, takes the pressure off of trying to keep the pantry stored with store bought brownie mixes.
A Little History
My Grandma and Grandpa Goff lived in Clinton, Kansas and raised four boys in a four-room house on their family dairy farm. Yes, 4 boys, one bedroom, it makes me feel really spoiled and a little guilty that my kids each had their own room. Anyway, she needed to have something special for dessert for the boys after they spent the day working the farm. (Grandpa always had a secret stash of fudge pops in the freezer on the porch – but we’ll talk about that another time!)

The “Boys”
Gather the Ingredients
There are both wet and dry ingredients, and I always measure out all of my ingredients before mixing anything together. This helps to ensure that all the ingredients make it into the mix, as I have had issues with that in the past – being interrupted while mixing ingredients is usually the culprit.
Mix it all Together
Start by mixing your vegetable oil, sugar, vanilla and eggs. Sift the dry ingredients into the wet ingredients. Combine well.
Pour into a greased 8×8 square pan. Bake at 350 degrees for 30 minutes.
Let cool for 30 minutes, before cutting.
Be Ready to Indulge in Chocolate
We like to take these and heat them in the microwave for 20-30 seconds and top with a scoop of raspberry sorbet. Of course, any sort of frozen confectionary would be very good on top of this delicious brownie. You can also sprinkle them with powdered sugar – or ice them with frosting. Enjoy!

Grandma Goff’s Brownies
Ingredients
- 1/2 cup Shortening melted or vegetable oil
- 2 Eggs (Use 1 egg for chewier brownies)
- 1 cup Sugar
- 1 tsp Vanilla Extract
- 3/4 cup All Purpose Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Cocoa Powder
Instructions
- Heat oven to 350 degrees.
- Mix together shortening, eggs, sugar, and vanilla.
- Sift together dry ingredients.
- Add into wet ingredients. Stir to combine.
- Pour into 8 x 8 square pan, sprayed with cooking spray. Smooth out the mixture and bake for 30 mins at 350 degrees.
- Cut when cooled.
